Chicken can be one of the hardest foods to cook. A lot of times chicken comes out dry, overcooked, or even under cooked. Here is a super easy recipe that comes out good every single time!
First of all, I fill the bottom of my slow cooker with onions. I cut a few pieces of large potatoes, and add the chicken thighs in there. You can use drumsticks if you like also.
The next part you can play around with. Personally here is what I use to give the chicken a little seasoning. I mix 1 and a half spoons of olive oil, salt, pepper, 3 cloves of crushed garlic and some lemon juice and / or zest . I pour this on top of the chicken and leave the slow cooker on high for 4 hours. Halfway through, you should flip the chicken, and mix a little bit.
After 4 hours in the slow cooker, I put just the chicken into an oven that has been pre-heated to 350 degrees. After 10 minutes, I will flip the chicken, and let it sit in the oven for another 10 minutes. Make sure the skin is golden brown, and voila. Your chicken will be crispy on the outside, and juicy on the inside! Serve as is, or with a little bit of rice or salad, and you have a delicious meal waiting that you cannot go wrong with!
PS – I tried once with some herbs added, but didn’t come out to my liking.
